Recipe: Spinach dip bread boat

This is a really easy, yet very yummy and impressive thing to bring to a party, BBQ or luncheon. The best part is that it cleans itself up; as the loose bread gets used up, you can start eating the “boat”.

Ingredients:

  • 1 white cob loaf
  • small container/carton of sour cream
  • 300mL S&W whole egg mayonnaise (this my preferred brand, but you can use any whole egg mayo)
  • 1 pkt frozen spinach
  • 1 pkt Continental “Spring Vegetable” soup mix (or in Norway you can use Kim’s holiday dip mix)

Method

Cook the spinach from frozen in the microwave for about 4 minutes, then drain any liquid and place in a mixing bowl.

Add sour cream, mayonnaise and soup mix and stir.

Cut the top off the cob loaf and put aside.

Pull out the inside of the loaf, breaking bread pieces into dippable chunks and place around the load on a serving platter.

Pour dip into the bread “boat”. You can either put the “lid” back on, or break it up to serve with the other dipping bread.

Once the dip gets lower and the bread starts to run out, people can start breaking up the boat and eating that too. Delicious!
